1. roasted almonds with fleur de sel: Preheat oven to 350. Line rimmed baking sheet with foil and spray with nonstick spray or olive oil. Whisk the white of one egg until it starts to foam. Add 1 tbsp sugar and whisk until frothy. Whisk in 1 1/2 tsp rosemary, 1 1/2 tsp fleur de sel, 1/4 tsp cayenne. Add 3 cups whole blanched almond and stir. Transfer to baking sheet. Bake until golden stirring every 10 minutes. Between 30 and 40 minutes. Cook completely on sheet. I really like them! 2. Pecans (my favourite of these) 1 1/2 tsp onion powder, 1 1/2 tsp garlic powder, 1 1/4 tsp coarse kosher salt, 3/4 tsp curry powder 1/4 tsp cayenne pepper 2 Tbsp unsalted butter, 2 tbsp honey 3 cups pecans. Preheat oven to 250 F. Line large baking sheet with foil. Mix spices in small bowl to blend. Melt butter and honey with pinch of salt in havy saucepan. Add pecan halves and stior to coat; remove from heat. Add spice mix and toss to coat evenly. Spread pecans in single layer on prepared baking sheet. Bake until try and toasted about 40 minutes. Cool completely and separate. 3. These are also nice: nonstick vegetable oil spray, 6 tbsp unsalted butter, 1/2 cup packed golden brown sugar, 1/4 cup water 1 tbsp chili powder, 1 1/2 tsp salt, 1 tsp ground cumin, 1 tsp dried oregano, 1/2 tsp ground black pepper, 14 tsp cayenne pepper, 2 cups walnut halves, 2 cups pecan halves and 2 cups almonds. Melt butter add spices and sugar and stir until sugar dissolves, about 1 minute. Add all nuts and stir until butter mix coats nuts thickly about 2 minutes. Spread in single layer on prepared sheet (you can do as per above or spray with veg oil spray) and bake until nuts glazed and deep brown, stirring often. I did it same time and temp as the others but recipe says 300 f for 25 minutes.
