2 cups seedless green grapes, quartered, 1/2 cucumber, sliced and quartered; 2 scallions trimmed and thingly sliced, 1 small fresh jalapeno cored seeded and minced (or one of the mild red chilis), 3 tbsp chopped fresh mint, 2 tbsp fresh lime juice or more to taste; salt and freshly ground pepper. Combine in a medium bowl. Let stand a little and adjust lime juice, salt and pepper to taste just before serving. Really refreshing.
