This is excellent - got it from Lucy Waverman-James Chatto food and wine cookbook. Soba noodles and spicy greens dressing: whisk together 2 tbsp soy sauce, 2 tbsp rice vinegar, 2 tbsp sake (or dry sherry), 2 tbsp mirin (or weeter sherry), 2 tbsp sesame oil, 1 tbsp wasabi paste until smooth. Reserve Bring pot of water to boil. Add 8 oz dried soba noodles and cook 2-3 minutes.. Drain and toss with 4 green onions, slivered, and half the dressing.Heat vegetable oil in large skillet over high heat. add 2 tsp chopped ginger,, 1 tsp chopped garlic and 1/2 tsp hot red epper flakes. Stir fry for 30 seconds. Add asparagus and stir fry for 2 minutes or until bright green. Add 4 cups sliced bok choy and stir fry for 1 minutes. Add 4 cups baby spinach and stir fry 1 minute longer. Remove from heat and stir in remaining dressing. Toss vegetables with noodles and season with salt and pepper. Sprinkle with Sesame seeds.
