Watermelon Gazpacho This was superb! I threw in a few wild blueberries too.
for 4 1 3lb seedless watermelon diced (about 5 cups divided into 4 +1), 1 small cucumber, peeled and diced (I used English or Mediterranean so no need to seed), 1 med red pepper seeded and diced, 1 med yellow bell pepper seeded and diced, 1 small jalapeno seeded and minced, 1/2 small red onion diced, 1/4 c finely chopped fresh mint, 3 tbsp fresh lime juice, 2 tbsp red wine vinegar 1/4 tsp sald 1/2 c creme fraice or sour cream Puree 4 cups watermelon until smoth. Transfer puree to large bowl. Add remaining cup watermelon and next 10 ingredients; stir to combine. cover gazpacho and refrigerate until cold. Divide among bowls and serve with dollop of creme fraice.
Yoou can also make a salsa with watemelon cubes tossed with chopped sweet onion, jalapeno, basil and a bit of fresh lime juice or drape prosciutto over watermelon wedges, top with shaved parmigiano reggiano, drizzle with saba vinegar (or balsamic).
